Chicken With Orange Sauce
Fast, fruity and refreshing way to serve chicken

4 chicken breasts, skinless and boneless
1 cup chicken broth
½ tablespoon butter

Sauce

1 tablespoon cornstarch
1 teaspoon finely shredded orange peel
½ teaspoon salt
1 cup orange juice
¼ cup chicken broth
1 teaspoon honey
2 oranges, peeled and sliced

Method

1. Wash chicken; pat dry.
2. In a pan or wok, melt butter and brown chicken breasts.
3. Add 1 cup of chicken broth and simmer, partially covered for about 20 minutes or until chicken is thoroughly cooked.

To prepare sauce

1. Mix cornstarch, orange peel, salt, orange juice and chicken broth in a small saucepan.
2. Bring to boil, stirring constantly.
3. Reduce heat; cook until thick.
4. Stir in honey to taste. Add more broth if it gets too thick.
5. Add orange slices to sauce and cook until heated through.
6. Transfer chicken to serving plate. Spoon sauce over chicken and garnish with orange slices.
