Koh Chieng Mun’s Recipe for:
“Everything Also Can Use” Basic Roasted Tomato Sauce

Ingredients (for one portion) :
Six large tomatoes
Six cloves of garlic (whole)
Two tablespoon Olive oil
Sea salt and Black pepper to taste

Method:

1. Cut tomatoes into half and lay them in a baking tray with the skin facing up.
2. Drizzle Olive oil over tomatoes. Place garlic cloves in between the tomato halves.
3. Season with salt, pepper, and bake in a 350F /180C oven for 20 minutes. After 20 minutes, switch off the oven and leave the tomatoes to continue cooking in the oven for at least 30 minutes or so.
4. To use, just pull off the blistered tomato skins. Chop roughly in the baking tray and transfer to a bowl, ready to use as a sauce base.

Suggestions for using Basic Roasted Tomato Sauce

Spaghetti with Meatballs

Ingredients :
300g dried Spaghetti
200g minced beef/chicken/lamb
1/2-cup breadcrumbs
One egg
1/4-teaspoon oregano or mixed herbs
One portion roasted tomato sauce
Salt and pepper to taste

Method:

1. Mix mince with breadcrumbs, egg, herbs and seasoning. Shape into small balls and shallow fry lightly in olive oil until golden brown. Drain on kitchen paper to remove excess oil.
2. In the same frying pan, remove oil, leaving about a tablespoon in the pan. Pour in tomato sauce and bring to a boil. Lower hear and simmer for 10 minutes until sauce thickens. Put in meatballs and cook for a further five minutes.
3. Boil spaghetti and add to sauce. Toss well and serve immediately. (Serves 4).

Rich Tomato Soup

Ingredients :
Four cups chicken or vegetable stock
One portion Roasted tomato Sauce
Fresh Basil leaves
Salt and pepper to taste
2-tablespoon sour cream (to garnish)

Method:

1. Put stock and tomato sauce in a large saucepan and bring to a boil. Lower heat and simmer for 10 minutes, stirring occasionally.
2. Transfer soup after it has cooled (about 20minutes) into a blender and grind till smooth.
3.

Return soup to the saucepan. Heat up the soup and serve with thinly sliced Basil leaves and a small dollop of sour cream. (Serves 4) Soup goes well with crusty bread

Note:
“Everything Can also Use” Roasted Tomato Sauce can be used as a sauce base for dishes like pizzas, salsa relish, curries or any dish that calls for tomato sauce.
