Cut tomatoes into half and lay them in a baking tray with the skin facing up. |

Drizzle Olive oil over tomatoes. Place garlic cloves in between the tomato halves. |

Season with salt, pepper, and bake in a 350F /180C oven for 20 minutes. After 20 minutes, switch off the oven and leave the tomatoes to continue cooking in the oven for at least 30 minutes or so. |

To use, just pull off the blistered tomato skins. Chop roughly in the baking tray and transfer to a bowl, ready to use as a sauce base. |
