Stir-Fry Chicken Salad
Fast, fruity and refreshing way to serve chicken

Ingredients:
2 chicken breasts, sliced
50g French beans, cut in half
4 shiitake mushrooms, sliced
6 baby corn, cut in half
50g spinach leaves
1 tbsp oyster sauce
1 tbsp oil
1 tsp lime juice
½ tsp sesame oil
1 tsp coriander, chopped
Salt and pepper to taste

Method:

1. Marinate the chicken in oyster sauce, salt and pepper for 5 minutes.
2. Heat oil and saute the French beans, mushrooms and baby corn for 1 minute. Add spinach leaves and give a quick stir. Remove the vegetables and set aside.
3. In the same pan, stir-fry the chicken until done and add in vegetables.
4. Mix in lime juice, sesame oil and coriander into the chicken. Stir gently and serve.

Tips:
Add some pine nuts for added flavour and crunchiness.
